Leisa Colin from Brilliant Food

How did you get into producing Smoked Fish?
“Originally trained as a chef, the art of smoking food was learnt as an apprentice.  Eventually I sold my cafe and went to work with my husband. After three years, I realised working with him and being married was too much.  So I started Brilliant Food.  It was only ever to be a part-time business, but it overtook me from day one.”

What are some of your favourite ways to enjoy your products?
“Anything simple – the original combo is the best. Smoked ocean trout with cream and pickled onions on baguette is still my fave!”

Do you have a favourite product of yours?
“Smoked Ocean Trout, close second smoked kingfish rillettes”

What’s one thing people don’t know about smoked fish?
“Atlantic salmon and ocean trout are farmed fish and cannot be commercially fished in Australia. These species are not native to our waters.”

What’s your favourite thing to do outside of all things Brilliant Food?
“My passion is snow skiing.”

Name something about you that would surprise your customers
“Once upon a time, 30 years ago, I was a professional tennis player ranked 300 in the world for singles. Unfortunately, I had a massive shoulder operation that stopped my career. I then studied cookery.”

“My fish tastes best with ‘a glass of wine and good company’!”

Is there something you have learnt over the years that you wish you knew when you started Brilliant Food?
“Don’t worry ‘if it’s meant to be it’s meant to be’. I’ve learnt it but haven’t mastered the art of it.”

What’s your favourite recipe that doesn’t include smoked fish?
“My Homemade meat pies – super in winter.”

What is your favourite part of your job?
“Customers telling me that our fish made their Christmas table awesome! I think Christmas is the most important meal of the year.”
